Sparkling mead is a sparkling wine produced when honey is fermented. Sometimes called honey wine or honey sparkling wine, the wine is made in a process similar to some sparkling wines, such as champagne or sparkling white wine, but its main ingredient is honey.

The process of making sparkling mead usually involves mixing honey with water and adding yeast to ferment it. During the fermentation process, yeast converts the sugar in the honey into alcohol and carbon dioxide, which is what creates the bubbles. Some manufacturers may further ferment the wine a second time to increase the amount and persistence of the bubbles.
